More and more people these days convert to a vegan, gluten-free diet. Some people do it for health reasons, some are just following a popular trend. But no matter what your true reasons are, going vegan is the best decision you will ever make, simply because you are saving a life, dozens of lives actually, of innocent living beings that are being murdered and mutilated for the benefits of the industry.
There are a lot of misconceptions going around about vegans, especially their frugal diet. Yes, I admit that early vegan cookbooks barely had anything healthy and nutritious in them. Let alone the food looked and tasted horrible. But I can assure you that the times have changed and they changed for the better.
This is why I would like you to meet Bettina Campolucci Bordi, a vegan blogger, an author, a chef with the most unusual life story who will change your mind about plant-based diet. She was born into a multicultural family in East Africa, then she relocated to Spain and now is finally settled in London. She decided to go vegan and gluten-free for health reasons mostly, and she couldn’t be happier about it.
Being obsessed with healthy vegan food, Bettina Campolucci Bordi founds Bettina’s Kitchen, a business that includes her blog, recipes, and workshops. On her Instagram she shares recipes and culinary tricks with her 100+K followers on a regular basis.
Bettina has recently published a book named “Happy Food” with the biggest collection of the most delicious, nutritious, gluten-free, sugar-free, and most importantly vegan recipes that will definitely make you drool all over the place.
I can assure that this cookbook is nothing but a masterpiece. It’s happy, it’s bright, it’s colorful, and of course, it’s tasty. This book is for everyone. It’s for grandmothers who are waiting for their grandchildren who recently adopted vegan diet come over for dinner. It’s for mothers who want their kids to eat more veggies. It’s for singles who just looking for a quick bite after a long day. And finally, it’s for everyone who simply wants to give vegan, gluten-free diet a try.
The book is very well written. The recipes in the book aren’t very complex or challenging. Even if you think you have zero cooking skills and you just waste the ingredients, believe me, you can handle these recipes. I’m not a chef either, but just looking at these colorful photos makes me wanna go to the kitchen and prepare something delicious for dinner. I think I’ll go with the potato salad tonight.
